Speck.
Speck is a cured ham that has a mild and delicate
flavor. It is better-balanced in taste than hams
from Northern Europe which are aged for a shorter
period of time. However, it has a more distinctive
flavor than Mediterrenean Prosciuttos. Speck is
therefore the perfect „aromatic“ link
between the North and South of Europe.
Alto Adige PGI (Protected Geographical Indication)
Speck is a cured ham that is aged for at least 22
weeks. The European Union awards Speck with PGI
status. Protected Geographical Indication (PGI)
is one of two designations introduced by the European
Commission in 1993, to protect the integrity and
reputation of agricultural products or foodstuffs
having an identified geographical origin.
